Original Recipe Yield 2 servings
2 x150g (5oz) boned chicken breasts skinned
2 tbsp tomato puree
1 tbsp clear honey
1 tbsp Worcestershire sauce
1 tbsp chopped fresh rosemary
115g (4oz) cherry tomatoes
sprigs of rosemary, to garnish
85g (3oz) raw weight rice boiled
Cut the chicken into 2.5cm (1-inch) cubes and place in a bowl. Mix together the tomato puree, honey, Worcestershire sauce, and rosemary, and add to the chicken. Stir gently until evenly coated.
2. Thread the chicken pieces and tomatoes alternately on to 4 wooden skewers, and spoon over any remaining glaze.
3. Cook under a preheated hot grill for 8-10 minutes, turning occasionally, until cooked and tender.
4. Serve on a bed of boiled rice, garnished with sprigs of rosemary.
